i’ve not been much for spending a lot of time in the kitchen lately. this pregnancy has been taking a bit of a toll on my body but it’s certainly not taking a toll on my cravings. and this is one of those things that i have been craving a lot of lately. this homemade bread bread that is coated with bananas and blueberries (and i’ve been throwing in chocolate chips too). it’s been a guilty pleasure of mine.

andrew found a cozy spot on the countertop for my kitchen aid too so i don’t have to bring it down from the top shelf anymore. it’s nice that it’s readily on hand whenever i’m in the mood. bent over the wood chopping block cutting and measuring and scooping and pouring into the mixer is my happy place in the late afternoon. it’s a good way for me to slow down. addison pushes around the empty laundry basket, collecting all her toys and i bake.

the best part of this whole process is when i put it in the oven, she runs up to the door and i flip on the oven light and we wave at the loaves and talk about how the oven is hot and what all the animals say and how excited we are to eat warm gooey bread slathered with butter. but of course, you can always leave it alone and not add the extra butter too.

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter
1/2 teaspoon vanilla extract
1 cup sugar
2 large eggs
1/4 cup buttermilk
3 ripe bananas
1 cup blueberries

to prepare, preheat oven to 350. lightly coat pan(s) with non-stick spray. in a large bowl, combine flour, baking powder, baking soda, and salt. in a bowl with electric mixer, beat butter and sugar on medium-high until light and fluffy, about 2-3 minutes. beat in eggs, buttermilk and vanilla extract until well combined. beat in bananas until well combined. gradually add flour mixture to the sugar mixtures at low speed, beating just until incorporated.

add blueberries and gently toss to combine. scoop the batter evenly into loaf pans. place into oven and bake for 30-35 minutes or until tested inserted comes out clean. cool for 15 minutes.
