i’m usually not a fan of making cookies. every single cookie tastes delicious when it’s fresh out of the oven and once it cools ff it turns rock hard and certainly not enjoyable to eat at all. i try to avoid making cookies at all costs but the thing about cookies is they’re an icebreaker. and i was in need of an icebreaker when it came to introducing myself to my neighbor. so i did what anyone would do when they need a little inspiration. i reached for a book. okay maybe not anyone would do this but i always have books around for a ton of inspiration and ideas.
this cookie recipe was found in my favorite inspirational book by elsie and emma. i figured these chocolate chip cookies would turn out hard like they all do in the end but i made them three days ago and the last one i ate this morning was just a gooey as the first one. i will honestly never need another chocolate chip cookie recipe again!
plus, i gathered the courage to take a plate over to the neighbor and meet her. finally. we’ve only lived here for a month and a half.
the best ever chocolate chip cookie
adapted from happy handmade home book
makes two dozen
3 1/2 cups all-purpose four
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
2 teaspoons salt
1 1/3 cups softened butter
1 1/2 cups brown sugar
1 cup granulated sugar
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1. preheat the oven to 350 degrees f. in a bowl, whisk together the flour, baking soda, baking powder and salt. set aside.
2. cream together the softened butter and sugars. add the eggs and vanilla extract and stir until just combined. add the flour mixture to the creamed butter and mix until just incorporated. stir in the chocolate chips until just combined.
3. spoon the batter onto a baking sheet lined with parchment paper. bake for 14 to 16 minutes, until the edge are just beginning to brown. remove from the oven and move to a cooling rack. serve warm with a glass of milk.
